Potato Chips Recipe - Why?

Potato Chips & Dip are surprisingly easy to make and are better tasting and much more fresher than the ones you can buy at the stores. Homemade dips are also much more healthier and fresher than what is available at stores and because you made it you can control what ingredients are in it.



The Best Potatoes For Potato Chips:

The best potato to use for making homemade chips are potatoes that are high in starch and low in moisture. These qualities will give you a crispy chip that will change to a light brownish color when cooked. The potatoes of choice for making home made chips are russets or another starchy potatoes like Idahos or Sweet Potatoes.



The Best Oil For Potato Chips:

You want to use a oil that has a high smoke point temperature such as canola oil (rapeseed oil). Canola oil is also known for its low levels of saturated fats which makes it a excellent healthy choice for deep-frying fries and chips and canola's light flavour doesn't cover over the potatoes own taste. Other oils which are also excellent for cooking chips include safflower oil and refined peanut oil which gives more flavor to the chips and is generally preferred for taste over the others.

Potato Chips - The Recipe:


Potato Chips Recipe - The Ingredients:

  • 5 russets potatoes (or yellow or sweet potatoes)
  • Canola, refined peanut oil or safflower oil (Either will do)
  • Salt & pepper


  • Potato Chips Recipe - Slicing & Cooking:

  • Use a mandolin to slice the potatoes thin
  • In a bowl rinse the potatoes under cold water or put them in a ice water bath to remove excess starches (very Important) and then thoroughly pat them dry with a towel.
  • Heat up the oil to about 350-365 degrees or use the wooden spoon method (shown in my video) if you don't know the temperature of the oil
  • Divide the potatoes slices into manageable batches depending upon the size of the pot or deep fryer
  • Add a manageable batch of potato slices into the pot to fry and stirring them frequently.
  • Cook until they are lightly brown
  • Remove the chips with a slotted spoon onto a paper towel on a plate.
  • Immediately add on the salt & pepper onto the chips


  • Potato Chips Recipe - The Dill Dip:

    In a bowl add:

  • 1 cup of sour cream
  • 1/2 - 1/4 cup of fresh dill chopped fine
  • 1 tablespoons of chopped fresh chives
  • Chives
  • 1 garlic graded fine
  • 1 tablespoon lemon juice
  • 1/2 teaspoons salt & pepper
  • 2 teaspoons sugar
  • Mix well and put in the fridge to allow it to set up
