How to Make Coconut Banana Cream Pie

Coconut Banana Cream Pie is yet another must have delicious and easy to make treat which goes along well with almost any meal, or just by itself as a delicious late night snack.



Coconut Banana Cream Pie Recipe - The Pie Crust

In a food processor add:

  • 2 cups of flour
  • Mix in 1 teaspoon salt
  • Mix in 3/4 cups cold lard in the flour
  • Add 4 to 8 tablespoons of cold water slowly while mixing until dough forms a ball (watch the video)
  • Wrap dough in Saran Wrap and put in fridge for 20 mins
  • Roll out dough then fold it out onto the pie plate and make the edges look nice, and prick little holes all over the dough with a fork
  • Cook the pie crust in the oven at 375 F oven until its light brown in color, remove from oven and let it cool.

    While On medium heat add to to a pot:

  • 1 1/2 cups of milk
  • 1 can of coconut milk
  • 5 egg yolks
  • In a bowl mix together 1/3 cups cornstarch and 1/2 cups of sugar and slowly stir it in to the milk/egg mixture

  • Add in 1/2 teaspoon salt and stir constantly until pudding thickens, remove from heat
  • To the mixture mix in 1 cups sweet coconut
  • 2 tablespoons of butter
  • 1 teaspoon vanilla

  • Add the pudding to pie crust and let it sit in fridge for about 3 hours to firm it up
  • Place sliced bananas on top of the pudding then add whipping cream
  • And add more bananas for on top of the whipping cream
