How to Make Homemade Pierogies (Potato or Cottage Cheese)

What I love about pierogies is that you can make them in large batches and then freeze them for a quick and easy delicious meal for anytime you want them. There are no pierogies as good as homemade pierogies and I have never come across a store bought pierogies that were anywhere near as good as these homemade ones are.



Homemade Pierogies Dough Recipe

Mix together:

  • 2 eggs.
  • 1/2 cup warm milk.
  • 1 tbsp salt.
  • 1 tbsp olive oil.
  • 2 1/2 cup flour.
  • Mix well then knead dough for 10 mins then let it sit for 1/2 hour.

  • Add salt to the water for boiling the potatoes.
  • Peel & cut four large Potatoes, put in pot cook until done.
  • In a cast iron pan, add one stick of butter, one chopped onion, one chopped garlic, and add a pinch of salt pepper. Cook till done then add to bowl.
  • Fry in the same pan 1/2 cup of hamburger, a pinch of seasoning salt & pepper, cook then add to bowl.
  • Add a cooked mashed potatoes to bowl and 3 cups of Cheese. Mix well and set aside.

    Pierogies Dough

    Mix all the ingredients together well:

  • Large container of dry cottage cheese.
  • 1 egg yolk.
  • A pinch salt & fine pepper.
  • 2 green onions chopped fine.

  • In a pot add one tbsp butter.
  • 1 tbsp flour.
  • Cook on medium heat for 1 or 2 mins.
  • Then add 1 C. Cream, pinch of salt & pepper, and pinch nutmeg.
  • Mix well

  • Roll dough out then cut dough into squares.
  • Fill up each square with your choice of fillings, the potato filling or the cottage cheese filling.
  • In a large pot boil salted water then add your pierogies.
  • Cook for 5 to 10 min or until they are floating.
  • When pierogies are done add cream sauce with chopped green onion or sour cream on top.
